Restaurants are Underpricing Wine By-the-Glass Offerings

On-premise trends the last few years have shown by-the-glass (BTG) wine offerings are increasingly eating into by-the-bottle (BTB) choices [see WSD 05-15-2015]. For operators looking to capitalize on the BTG trend, on-premise software firm Uncorkd has recently released some relevant data on pricing trends and strategies. The big reveal from Uncorkd is that the optimal price range for BTG wine offerings that will "maximize diner interest" is between $11 and $15.
