How to Boost By-The-Glass Programs

Three on-premise wine experts were bullish on "BTG" (by-the-glass) programs at the National Restaurant Association's International Wine, Spirits and Beer show earlier this week. Consumers are demanding such programs more: A recent Ink Foundry study that surveyed 100 wine directors and buyers reveals 88% of them find consumers demanding more by-the-glass options than in the past. The survey also found that people are increasingly opting for the premium glass rather than the bottle. Former Fleming's wine director Marian Jansen op de Haar says this research rang true at the restaurant, where people pillaged the reserve BTG list, even when the glass was simply "pro-rated."
