Two of the former owners of Chicago's Sam's Wines and Spirits, Fred and Brian Rosen, are lending their experience to a different retail concept in Illinois called Evolution Wines & Spirits. Evolution already has two stores in Northbrook and Peoria, Illinois and is opening a third store in Chicago's Bucktown neighborhood October 28. Each store is about 4,000 square feet and carries 3,000 SKUs of wine, spirits and craft beer.
